I don't think "industry" is the right word to use in this context...
Nonetheless, check out Cowboy Bebop. It is, in my opinion, the perfect anime series. It's basically a film-noir space western. Best soundtrack ever, lots of action, a little comedy, excellent character development.
If you like mindfuck, look into Serial Experiments: Lain and Paranoia Agent. Both are extremely abstract and a little disturbing at times.
Evangelion is shit, but watch it anyway. It's required viewing if you're looking to become an anime enthusiast. It's about a whiny emo kid who pilots a giant robot (not really a robot, but I don't want to spoil anything) and then develops a bunch of mental illnesses.
Personally, I Ergo Proxy is one of my favorites, but I'm sure a lot of people would disagree with me. It's got some pretty interesting allusions and philosophical shit, even if it does lag a bit towards the end. It's postcyberpunk with a few steampunk elements.
Gunslinger Girl is alright if you're looking for something incredibly sad. It's about little girls who are trained to be assassins.
Ghost in the Shell (the original movie) is also a must-see. It's about an organization called Section 9 trying to stop a hacker called the Puppetmaster.
