A hangover is a form of mild acetaldehyde poisoning taking place until the body's conversion of ethanol to acetaldehyde catches up with it's conversion of acetaldehyde to acetic acid, many people of european descent (read: us whites) express resistance alleles in the form of roughly equivalent amounts of alcohol dehydrogenase versus acetaldehyde dehydrogenase. This, of course, is aside from the fact that these amounts just generally go up and stay that way for quite a while the more of a drinker you are.
However, many japanese people have a genetic mutation where much, much more alcohol dehydrogenase is present compared to acetaldehyde dehydrogenase, causing horrible hangovers before they even get decently drunk.
