Depending on your tolerance for eighties animu, you may or may not want to start with SDF. You'll want to get round to watching it eventually, but many of the Macross sequels and OVA's can actually be enjoyed without seeing SDF, and you won't get turned off by eighties QUALITY.
I'd personally suggest Zero. It's fucking gorgeous, the dogfights will make you drool, the character animation is lovely, and the story is short, but sweet. Five ep OVA which sets up a lot of the backstory of the setting.
Macross Plus is another self contained short arc (4 eps), which doesn't really need any setup to enjoy. Also, Yoko Kanno soundtrack.
Otherwise, you can do worse than just starting with Frontier. All the plot you need gets explained in the opening sequence, and it's all round well done. Also, Yoko Kanno again.
Macross II and Macross 7 are both best avoided unless you're an obsessive completionist.
